Cristiano Visintini, a first generation cooper trained extensively in France along with oenological training at the University of Bordeaux. Now with 25 years of experience in production at Mastro Bottaio, Cristiano creates bespoke “legacy” casks from European Oak and other specialty woods. Choosing to focus on polyphenols and polysaccharide content as a gauge for wood consistency, respect for wine typicity rather than an oak flavor fingerprint is the priority.
Demi-Muds and larger oak casks are widely used in the traditional and classic Rhone Valley wines and Italian wines of Venito, Tuscany and Piedmont. With an emphasis on micro-oxygenation over flavor these tanks are legacy winemaking instruments that can be passed down to family generations.
